Tasting Note
Citrus oil, green apple and hazelnut with a stony, chalky mineral core. Medium‑full, satiny texture with subtle buttery pastry and precise acidity, finishing with a focused, chalky grip.

Food Pairing
Western: roast chicken, mushroom risotto, buttered lobster, grilled sea bass, soft goat cheeses. Asian: sushi/sashimi, tempura, steamed fish with ginger & scallion, mild Thai coconut curry, dim sum.

Production Method
Hand-harvested Chardonnay; barrel fermentation in French oak (small percentage new), lees aging with periodic bâtonnage, malolactic fermentation and bottling after cellar maturation.
