Tasting Note
Fresh green apple, pear and lemon zest with white flowers, saline minerality and a hint of petrichor; citrus peel and orange-rind on a clean, precise medium–full palate with lively acidity and a penetrating finish.

Food Pairing
Western: roast chicken with lemon-herb butter, grilled sea bass, beurre blanc seafood, creamy pasta, soft cheeses. Asian: sushi/sashimi, tempura, miso-glazed black cod, steamed white fish with ginger and scallion, mild Thai or Vietnamese seafood dishes.

Production Method
Blend of Meursault-area parcels; grapes lightly crushed and fermented mainly in used oak with ~30–40% of the blend raised in stainless steel; aged on the lees for roughly a year.

Domaine Roulot (Jean‑Marc Roulot) farms ~15.5 ha (majority Chardonnay). Converted to organic farming around 1999 and practicing biodynamics with certification since 2000; based in Meursault, Côte de Beaune.
