Tasting Note
Salted lemon, green apple, white flowers, hazelnut and toasted almond with chalky minerality, bright citrus acidity, concentrated yet elegant texture and a long saline finish.

Western: roast chicken, lobster with beurre blanc, mushroom risotto, creamy pasta, grilled scallops. Asian: sushi/sashimi, miso-glazed cod, tempura, steamed fish, lightly spiced Chinese seafood dishes.

Production Method
Hand-harvested Chardonnay; gentle pressing; native and selected yeast fermentation in stainless steel and French oak (moderate new oak); élevage on fine lees. Estate farmed organically/biodynamically.

Clos des Bouchères is a small walled monopole (~1.37 ha) owned by Domaine Roulot (vines planted c.1950/1980). Jean‑Marc Roulot runs the biodynamic, site-focused domaine.
