Bright lemon and green apple, white flowers, hazelnut and toasted almond, with citrus oil, saline minerality and subtle vanilla from oak; vibrant acidity and a long, precise finish.

Seared scallops, lobster, roasted chicken, creamy Parmesan risotto; sushi (salmon, toro), miso-glazed black cod, steamed fish with ginger & scallions, tempura, Cantonese-style roast pork.

Production Method
Hand-harvested Chardonnay, whole-cluster pressing; indigenous-yeast fermentation in French oak barrels (partial new oak) with élevage on fine lees (~12 months) and minimal intervention; partial malolactic fermentation.
