Tasting Note
Ripe orchard and citrus oils with beeswax, toasted almond and saline minerality; medium‑full, satiny texture, bright acidity and a long, saline finish with hints of ginger and orange blossom.

Western: roasted chicken with butter sauce, lobster or scallops, mushroom risotto, cream pasta. Asian: miso‑glazed salmon/black cod, tempura prawns, steamed fish with ginger & scallion, creamy coconut‑based Thai dishes.

Production Method
Hand‑harvested Chardonnay; barrel‑fermented on native yeasts with 10–30% new French oak, aged 11–18 months on lees with minimal bâtonnage and partial stainless‑steel maturation before bottling.
