Tasting Note
Perfumed red-cherry and wild strawberry fruit with violet, black olive and subtle garrigue. Silky mid-palate, firm fine-grained tannins, minerality and spice, finishing very long with hints of white chocolate and forest floor.
Food Pairing
Roast duck, beef bourguignon, lamb rack, mushroom risotto; Asian: Peking duck, miso‑glazed fish, bulgogi (Korean BBQ), shiitake hot pot.
Production Method
Partial whole-bunch fermentation (10–20%); mostly destemmed. Matured in a high proportion of new French oak (approx. 70–80%) for c.18–20 months with gentle extraction and minimal filtration.

Marchand‑Tawse/Domaine Tawse acquired Maume plots in 2012; project founded by Pascal Marchand with Moray Tawse. Small holding in Mazis‑Bas (c.0.67 ha) planted to old massale-selection vines, focused on low yields and terroir expression.
