Tasting Note
Mature, complex Pinot Noir: dried red fruit, leather, truffle, forest floor, spice and subtle tobacco. Silky texture with integrated acidity and soft, resolved tannins, long earthy finish.

Roast duck, beef bourguignon, mushroom risotto, roasted lamb; Asian: Peking duck, char siu, miso-glazed salmon, shiitake soba, wagyu shabu-shabu.

Production Method
Traditional Burgundian vinification: (partial) destemming, open-top fermentation, aging in French oak barrels (mix of new and used), bottle aging for development.
