Tasting Note
Ethereal, perfumed red with red cherry, wild strawberry, truffle and spice notes. Silky texture, fresh acidity, refined tannins and a long, mineral-tinged finish; opens slowly with air.

Food Pairing
Western: roast duck, lamb, mushroom risotto, coq au vin, charcuterie. Asian: Peking duck, Cantonese roast pork (char siu), miso-glazed dishes, sukiyaki, shiitake stir-fry.

Production Method
Hand-harvested; partial destemming and fermentation in open-top vats; matured ~18–20 months in French oak barrels with a high proportion of new oak; minimal intervention in cellar.
