Tasting Note
Perfumed red fruits (redcurrant, raspberry), rose petal, forest floor, cinnamon and exotic spice with savory, smoked-duck and light medicinal undertones; medium-full, silky texture, firm mineral core and long, finely tannic finish.

Roast duck, lamb or beef; mushroom risotto, aged cheeses; Asian: Peking or roast duck, miso-glazed fish, mushroom hotpot, char siu or soy-braised short ribs.

Production Method
Hand-harvested Pinot Noir; spontaneous fermentation (indigenous yeasts) with significant whole-cluster use (circa 75% reported for this vintage) and élevage in new French oak casks (~18 months).
