Tasting Note
Concentrated red and black berry core with violet, forest floor, tobacco and spice. Silky texture, precise minerality, vibrant acidity and a long, layered finish.

Western: roast duck, beef bourguignon, venison, lamb, mushroom risotto, aged Comté. Asian: Peking duck, char siu, miso-glazed fish, soy-braised short ribs, shiitake and bok choy dishes.
