Tasting Note
Concentrated dark cherry and blackberry fruit with rose and violet florals, truffle and exotic spice. Silky texture, firm ripe tannins, vibrant acidity and a very long, perfumed finish.

Food Pairing
Western: roast duck, pigeon, beef tournedos, truffle risotto, aged Époisses or Gruyère. Asian: Peking/roast duck, soy- or miso-glazed black cod, braised short ribs (soy/mirin), mushroom hot-pot or truffle soba.

Production Method
Hand-harvested with strict sorting, high-percentage whole-cluster fermentation on native yeasts, extended maceration and roughly 15–18 months élevage in French oak (predominantly new); minimal-intervention, biodynamic vineyard practices.
