Tasting Note

Deep golden color; aromas of honeyed pear, citrus oil, white peach, lychee and toasted oak. Broad, concentrated and textural on the palate with vibrant acidity, intense minerality and a very long, layered finish.

Food Pairing

Western: lobster with brown butter, truffle pasta, roast capon, aged Comté. Asian: miso-glazed black cod, soy-ginger scallops, delicate sushi/sashimi (fatty tuna), steamed fish with scallions.

Production Method

Hand-harvested, wild-yeast fermentation in barrel, matured ~18 months in new French oak; typically bottled unfined and unfiltered. Domaine practices organic/biodynamic approaches in many holdings.
