Tasting Note
Concentrated black cherry, plum and dark berry fruit with exotic spice, violets, forest floor and truffle. Plush, velvety texture, vibrant acidity and fine, firm tannins leading to a long, saline-tinged finish.

Roast duck, beef short rib, lamb rack, mushroom risotto; Asian: Peking duck, Korean BBQ (bulgogi), miso‑glazed fish, braised short‑rib with soy; aged farmhouse cheeses.

Production Method
Hand-harvested Pinot Noir; partial whole-cluster fermentations with indigenous yeasts; élevage c.18–20 months in mostly new French oak barrels; bottled unfiltered or lightly filtered.
