Tasting Note
Perfumed dark berries, rose petal, orange rind and forest floor; silky texture with a saline, persistent finish, precise acidity and very fine, slightly clenched tannins—elegant and long.

Food Pairing
Western: roast duck, pigeon, mushroom risotto, roasted lamb, pork loin. Asian: Peking duck, char siu, miso‑glazed fish (black cod), soy‑braised mushrooms, shiitake and soba dishes.

Production Method
Hand-harvested, sorted; whole-cluster (no destemming) fermentation; aged in French oak (significant new oak) ~18 months; minimal-intervention with organic/biodynamic vineyard practices.
