Tasting Note
Powerful, mineral-driven Chablis: oyster-shell, flint and lemon rind with white peach, pear and subtle smoke. Saline, focused palate with bright acidity, broad volume and an extremely long, stony finish.

Production Method
Hand-harvested; pneumatic pressing; enzymatic settling (12–24h); indigenous yeast fermentation partly in stainless steel and partly in French oak; malolactic completed; aged ~8–10 months in tank and barrels; light filtration.
