Tasting Note
Citrus (Meyer lemon), stone fruit and white flowers with oyster-shell, flint and subtle smoky/reductive notes. Powerful, mineral-driven palate with fresh acidity and a long chalky finish.

Production Method
Pneumatic pressing; natural enzymatic settling; fermentation with indigenous yeasts partly in stainless steel and partly in oak; full malolactic; aged 8–10 months in barrel, light filtration.
