Tasting Note
Bright ruby; Morello cherry, raspberry, rose and spice with subtle tobacco and earthy notes. Medium-bodied, fine tannins, minerally thread and liquorice; poised, elegant and long.
Food Pairing
Western: roast duck, magret with foie gras, venison, roast Bresse chicken, mushroom risotto. Asian: Peking duck, char siu, miso-glazed salmon, shiitake soba, Korean BBQ (bulgogi).
Production Method
Hand-harvested Pinot Noir; ~15% whole-cluster fermentation, matured ~12–18 months in 80% new oak (Allier/Nivernais); domaine follows organic/biodynamic practices.
