Tasting Note
Concentrated dark cherry, blackberry and plum with rose-petal, spice, sous-bois, licorice and truffle hints; silky, refined tannins, fresh acidity and a long, mineral-tinged finish.
Food Pairing
Western: roast duck, beef bourguignon, mushroom risotto, aged cheeses (Morbier, Comté). Asian: Peking duck, char siu, miso-glazed salmon, shiitake mushroom hotpot.
Production Method
Hand-harvested; partial whole-cluster fermentation (c.25–40% whole bunches), 2–3 week maceration in small open vats with indigenous yeasts; aged 16–20 months in oak (c.80% new for Drouhin-Laroze).

Drouhin-Laroze owns a 1.50 ha parcel planted in 1949 in the centre of Chambertin-Clos de Bèze (east-facing clay-limestone soils). Family domaine with long Burgundian tradition.
