Tasting Note
Concentrated dark cherry, blackberry and raspberry with Seville orange, dark chocolate, vanilla and subtle floral notes. Silky, medium-plus body with supple, fine tannins, spice and mineral lift on a long, slightly oak-tinged finish.
Food Pairing
Western: roast duck with morels, veal escalope, roast lamb, mushroom risotto. Asian: Peking duck, soy-miso glazed pork, char siu, grilled Korean short ribs, shiitake noodle dishes.
Production Method
Hand-harvested; partial whole-cluster fermentation (c.30-40%); native yeast fermentation; matured ~18 months in French oak (≈80% new, Allier/Nivernais) with light–medium-plus toast; lightly clarified before bottling.
