Tasting Note
Brooding red and black fruits (blackberry, black cherry) with lavender, licorice, forest-floor and smoked spice. Medium-plus body, firm chalky tannins, saline minerality and a long, peppery finish.

Food Pairing
Western: roast duck, beef tenderloin, game birds, mushroom risotto, veal with cepes. Asian: Peking duck, Korean bulgogi, char siu, mushroom stir-fry, soy-glazed short ribs.

Production Method
Hand-harvested Pinot Noir; ~15% whole-bunch fermentation; gentle extraction; aged ~12–18 months in 75–80% new French oak; bottled without fining or filtration.
