Tasting Note
Dark ruby with blackberry, blueberry, liquorice and spice. Concentrated, elegant, with ripe yet tactile tannins, mineral lift and long finish.

Food Pairing
Western: roast duck, beef, lamb, mushroom dishes, foie gras. Asian: Peking duck, char siu, miso-glazed dishes, Korean bulgogi (braised short rib), shiitake/mushroom hotpot.

Production Method
Gentle maceration with ~20–30% whole-bunch; matured in oak (c.80% new); aged on lees through two winters before bottling.
