Tasting Note
Elegant, floral Pinot Noir: violet and wild-rose aromas with raspberry and blackcurrant, silky texture, refined leather and candied cherry; fine acidity, delicate tannins and a very long, mineral-driven finish.
Food Pairing
Western: roast duck, lamb, beef (rare), mushroom risotto, foie gras, aged cheeses. Asian: Peking duck, miso-glazed black cod, teriyaki beef, mushroom soba, Korean BBQ, char siu pork.
Production Method
Hand-harvested, gentle extraction with indigenous yeasts; 16–20 months ageing in French oak (matured in 100% new oak for this cuvée); careful sorting and low yields.
