Tasting Note

Delicate violet and wild-rose perfume over black cherry, blackberry and raspberry, with truffle, forest-floor and licorice. Silky, refined tannins, bright acidity and an extended, exotic-wood finish.

Roast duck, beef bourguignon, venison, mushroom risotto; Asian: Peking duck, miso-glazed fish, bulgogi, shiitake and soy-based dishes (umami-rich).

Production Method

Hand-harvested; partial whole-cluster (20–50%) fermentation in small open vats with indigenous yeasts; 16–20 months élevage in 100% new French oak (personalized toasts).
