Tasting Note
Perfumed blackcurrant and blackberry with violet, graphite, tobacco and cedar; refined and elegant with saline minerality, bright acidity, polished powdery tannins and a long, stony finish.

Food Pairing
Roast lamb, ribeye steak, duck confit, mushroom risotto; aged cheeses (Comté, cheddar); Asian: Peking duck, char siu, Korean BBQ, braised beef short ribs, spicy Sichuan beef.

Production Method
Hand-harvested, plot-by-plot fermentations (wooden tronconique tanks); aged ~18 months in new French oak (reported 90–100% new) before blending and bottling.
