Tasting Note
White peach, pear and green apple with honeysuckle, lime blossom and oyster‑shell mineral. Medium–full, satiny texture, crisp acidity, saline/sea‑spray minerality and a long, lightly spiced finish.

Food Pairing
Western: oysters, scallops, lobster, roast chicken with lemon butter, mushroom risotto, grilled sea bass. Asian: sushi/sashimi, tempura, miso‑glazed cod, steamed Cantonese fish, ginger‑scallion lobster.

Production Method
Whole‑cluster pressing, must settled ~24 hours, fermentation in oak (ambient yeasts), partial malolactic; aged ~12 months in 228L barrels with ca.15–25% new oak then tank maturation.
