Tasting Note
Dense dark fruit of blackberry and plum with dark chocolate, licorice, clove, tar and raw-meat/savory nuances; massive, concentrated palate framed by firm, grainy tannins and a long earthy finish.

Western: grilled/charred beef, barbecued ribs, roast lamb, venison, aged cheddar. Asian: Korean BBQ (galbi), char siu, Sichuan-style beef, rich Malaysian or Indian lamb curry, Peking duck.
Production Method
Hand-harvested single-block fruit, fermented in small/open fermenters, pressed and matured in 100% new French oak (French barrels) for extended aging (est. 18–24 months).

Produced by Elderton (Ashmead family). Sourced from a tiny Helbig block planted in 1915 on the Barossa’s western ridge; Elderton established as a winery in 1982.
