Tasting Note
Perfumed black and red berries, violets, truffle and dark chocolate with spicy new-oak nuance, fresh acidity and supple, fine-grained tannins; elegant, concentrated and long.

Western: roast lamb, braised short ribs, beef stew, mushroom risotto, aged cheeses (Comté, Manchego). Asian: Peking duck, char siu, Korean BBQ beef, braised pork belly, shiitake hot-pot.
Production Method
Hand-harvested, traditional fermentation in small vats, matured ~15 months in 100% new French oak; low-yield vinification aimed at concentration.
