Perfumed and intense: dark cherry, raspberry, violet and dried herb with baking spice and a subtle earthy/mineral seam. Bright acidity, velvety yet structured tannins and a long, savory finish.

Western: roast duck, mushroom risotto, roasted lamb, aged cheddar. Asian: miso-glazed salmon, Peking duck, char siu pork, teriyaki salmon, mushroom hotpot.

Production Method
Estate biodynamic farming; hand-harvested; spontaneous (wild) yeast ferment; ~20% whole‑bunch; 13 months in French oak (≈30% new); unfined and unfiltered.
