Tasting Note
Dark, meaty nose of bramble, black cherry, humus and dark rose. Opulent palate with wild bramble, chalky minerality, chocolate and mocha, chewy herbal complexity and fine powdery tannins. Concentrated, sophisticated and long.
Food Pairing
Western: roast duck, roast lamb, mushroom risotto, porcini pasta, grilled salmon, pork belly. Asian: Peking duck, teriyaki or miso-glazed salmon, Korean BBQ, yakitori, miso aubergine, shiitake ramen.
Production Method
Hand-harvested, small-batch wild-yeast fermentations with a portion whole clusters and moderate maceration; matured in French oak (c.13–17 months, portion new) and bottled unfined/unfiltered. Estate biodynamic viticulture.

Made by Felton Road from Block 3 in The Elms vineyard (planted early 1990s). Estate leader in biodynamic/organic viticulture; The Elms shows deep Waenga silty soils that give Block 3 power and complexity.
