Tasting Note
Aromatic dusty-rose and hibiscus with red cherry, plum, dried herbs and cola; silky mid-palate, fine-grained tannins, savory spice and a saline, persistent finish.

Western: roast duck, lamb ragu, mushroom risotto, porcini/tarragon dishes, roasted pork belly. Asian: miso-glazed black cod, char siu, hoisin/duck, mushroom and tofu hotpot, teriyaki salmon, yakitori.

Production Method
Demeter-certified biodynamic vineyards; hand-harvested fruit, long cold soak and native-yeast fermentation with ~20–30% whole clusters; 16–17 months in French oak (≈25–35% new); unfined and unfiltered.
