Tasting Note
Dark cherry and blackcurrant with cedar, tobacco and green-pepper hints; firm, resolute tannins and an austere, slightly herbaceous finish. Evolving tertiary notes of leather and forest floor with age.
Food Pairing
Western: roast lamb, beef rib, mushroom risotto, aged cheeses. Asian: Peking duck, Cantonese roasted pork, Korean BBQ beef (bulgogi), mushroom and soy-based stir-fries.
Production Method
Hand-harvested; traditional cuvaison with parcel-based fermentation, aged in French oak barrels (majority new in this era) for ~15–18 months.
