Tasting Note
Shows cedar, blackcurrant, tobacco, green pepper and forest-floor; pronounced oak and mint notes. Medium-bodied with firm, drying tannins, brambly dark fruit and a mid-weight, slightly austere profile; ends with a savory, cedar-tinged finish.
Food Pairing
Western: roast beef, lamb, venison/game, beef fillet with foie gras, truffle dishes, mushroom risotto. Asian: Peking duck, char siu, Korean BBQ (bulgogi), soy-braised beef, rich mushroom hotpots.
Production Method
Traditional Bordeaux vinification: destemmed grapes, controlled-temperature fermentation, malolactic fermentation, aged ~15–18 months in French oak barrels (significant new oak), then bottled after maturation.
