Tasting Note
Concentrated dark berry and cassis core with cedar, tobacco, violet and mineral notes. Firm ripe tannins, savory underbrush and spice; long, elegant finish with forest-floor complexity.

Food Pairing
Western: roast ribeye, braised short ribs, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), soy-braised beef or beef rendang.

Production Method
Hand-harvested, parcel selection; fermentation in wood and stainless vats; malolactic in tanks; aged c.15–19 months in 100% new French oak barriques.
