Tasting Note
Perfumed red and black fruits (blueberry, blackberry, Morello cherry), lavender, bergamot, fennel and tar. Full-bodied, graphite-laced fruit with powdery tannins, seamless acidity and a long, earthy, spicy finish.
Food Pairing
Western: roast lamb, grilled beef, braised short ribs, aged Manchego or other hard cheeses. Asian: Korean BBQ (bulgogi), char siu BBQ pork, spicy Sichuan mapo tofu, grilled teriyaki dishes.
Production Method
51% whole-cluster fermentation; aged 20 months in French oak (25% new); bottled July 2022. Small-lot vinification focused on Rhône-style blending.
