Tasting Note
Perfumed red and black cherry and blackberry with spice, cured-meat, truffle and earthy undertones; concentrated, savory mid-palate, ripe rounded tannins and a long, mineral finish.
Food Pairing
Western: roast lamb, grilled steak, beef stew, charcuterie, aged hard cheeses. Asian: Korean BBQ (bulgogi), char siu, Peking duck, Sichuan-style beef, yakitori (grilled chicken skewers).
Production Method
Fermented with ~45% whole clusters; matured ~20 months in French oak (≈41% new); bottled July 2020.
