Tasting Note
Black cherry, plum, violet, licorice, anise and baking chocolate; medium–full bodied with a velvety, silky texture, polished tannins and a long, savory finish.

Food Pairing
Western: roast lamb, venison, beef short rib, truffled polenta, aged cheeses. Asian: Peking duck, char siu, braised beef with soy and star anise, mushroom hot pot, Korean BBQ.

Production Method
Vinified in stainless steel/cement and matured ~18 months in a mix of new and used French oak barrels.
