Tasting Note
Concentrated white Burgundy: lemon verbena, orchard fruit, beeswax, hazelnut and saline minerality. Powerful, well-structured palate with lively acidity, bright citrus grip and a long saline finish, built for ageing.
Food Pairing
Western: roasted lobster, seared scallops, creamy chicken, mushroom risotto. Asian: miso-glazed black cod, sushi (fatty tuna), Cantonese steamed fish, rich Thai coconut-curry seafood.
Production Method
Hand-harvested Chardonnay fermented on indigenous yeasts; matured ~12–14 months in French oak barrels (approx. 25–35% new), aged on lees with occasional bâtonnage.
