Tasting Note
Citrus, white peach and pear with chalky, flinty minerality, almond and spring‑flower notes; subtle vanillin oak, fine saline acidity and a very long, precise finish.

Food Pairing
Western: scallops, lobster, roast chicken with beurre blanc, creamy mushroom pasta, pork with mustard. Asian: sashimi/scallop sushi, miso-glazed cod, steamed fish with ginger & scallions, light Thai or Vietnamese seafood dishes.

Production Method
Fermented with native yeasts and matured 12–18 months in French oak barrels (approx. 30–40% new), traditional Burgundian vinification.
