Tasting Note
Apple, pear and white-flower aromatics with citrus and honeyed stone-fruit; chalky minerality, fine incisive acidity and a creamy mid-palate. Long, saline-citrus finish with elegant texture and poised energy.

Food Pairing
Western: lobster, scallops, roast chicken, mushroom risotto, creamy pasta, Gruyère. Asian: miso-glazed black cod, sushi/sashimi, shrimp tempura, Cantonese steamed fish, yakitori (chicken).

Production Method
Hand-harvested fruit; native-yeast fermentations in tank and barrel, partial malolactic, élevage on fine lees with a proportion of older French oak (limited new oak).
