Tasting Note
White peach, lemon curd, pear and floral notes with toasted-oak spice, wet-stone minerality. Medium–full-bodied, rounded palate with concentrated fruit, saline minerality and a long, spice-tinged finish.

Food Pairing
Western: roast chicken, mushroom risotto, lobster with beurre blanc, aged cheeses (Comté, Gruyère). Asian: miso-glazed black cod, seared scallops with soy-butter, lightly spiced Thai coconut chicken, sushi (fatty fish).

Production Method
Hand-harvested; whole-cluster pressing; fermentation and élevage in French oak barrels (≈33% new); partial malolactic, 10–12 months on fine lees.
