Tasting Note
Yellow plum, Mirabelle and orchard fruit backed by lemon zest, crushed stone and saline minerality; apricot-skin and toasted-almond notes with subtle smoke. Medium-full, focused and tensioned with a long, stony finish.

Western: roasted chicken, mushroom risotto, lobster with butter, creamy pasta, Comté or Gruyère. Asian: Cantonese steamed fish, sushi/sashimi (salmon), tempura, miso-glazed black cod, delicate dim sum.
