Tasting Note
Crisp citrus and white peach with yellow-plum and almond notes, chalky sea-spray minerality, subtle brioche and fine oak; energetic, precise and age-worthy with a saline, persistent finish.

Food Pairing
Western: seared scallops, lobster with beurre blanc, roast chicken, creamy risotto, soft cheeses. Asian: miso-glazed black cod, sushi/sashimi, tempura prawns, Cantonese steamed fish.

Production Method
Hand-harvested; fermentation (native yeasts) and malolactic in French oak barrels; élevage ~11–18 months with about one-third new oak; lightly fined/filtered.
