Tasting Note
Ripe white orchard fruit, citrus peel and orange pith with grilled hazelnut, walnut and subtle spice; medium-plus weight, rounded texture, light tropical notes (passionfruit, pineapple) and a long mineral, saline finish.

Food Pairing
Roast chicken, lobster thermidor, pan-seared scallops, cream sauces and aged Comté; Asian pairings: sushi/sashimi, miso-glazed black cod, Cantonese steamed fish, light tempura.

Production Method
Hand-harvested Chardonnay; direct pressing, juice settled, fermentation in oak (≈40% new), native yeasts, full malolactic conversion, aged ~12–18 months in barrel before bottling.

Domaine Fontaine-Gagnard, founded 1985 by Laurence Gagnard and Richard Fontaine; run by Céline Fontaine. ~12 ha focused on Chassagne-Montrachet with small holdings in Le Montrachet, Bâtard and Criots. Sustainable viticulture, traditional Burgundian élevage.
