Tasting Note
Concentrated black cherry, blackberry and plum with violet, herbal sage, tobacco and mineral spice; fine-grained, powerful tannins and very long, layered finish.

Food Pairing
Western: roast lamb, braised beef, rich stews, game, aged blue cheeses. Asian: Peking/hoisin duck, char siu, Korean BBQ short ribs, mushroom or beef hot pot.

Production Method
Grapes fermented and macerated separately (Merlot c.14 days; Sangiovese c.14–18 days), aged ~16–18 months in French oak barriques (≈70% new).
