Tasting Note
Blackcurrant and black cherry with graphite, cedar, tobacco and menthol notes. Medium–full body, firm muscular tannins, bright freshness and a long savory, mineral finish.

Western: grilled ribeye, roast lamb, beef stew, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi), miso-marinated beef, Cantonese roasted pork (char siu).

Production Method
Hand-harvested; fermentation in stainless-steel vats, malolactic fermentation; aged ~12–18 months in French oak (≈50% new); light egg-white fining, minimal filtration.
