Tasting Note
Red and black cherry, raspberry and violet florals with sous-bois, sweet spice and cedar; silky, fine-grained tannins, mineral thread and a long savory finish.

Food Pairing
Western: roasted duck, beef bourguignon, venison with cherry reduction, mushroom risotto. Asian: Peking duck, wagyu sukiyaki, miso-glazed black cod, Korean bulgogi.

Production Method
Hand-harvested Pinot Noir; destemmed or partly whole-cluster fermentation on indigenous yeasts; 12–18 months maturation in French oak (portion new); minimal filtration.
