Tasting Note
Purple-fruited Pomerol: black cherry, plum, truffle, cocoa, graphite and cedar. Silky, plush texture with polished yet nervy tannins, balanced acidity and a long, spicy finish.

Food Pairing
Western: roasted lamb, beef short ribs, mushroom risotto, duck confit. Asian: Peking duck, char siu (Cantonese BBQ pork), braised beef with soy, shiitake hot pot or mushroom-based dishes.

Production Method
Hand-harvested, fermented in stainless/concrete vats with temperature control; aged ~18 months in French oak barriques (≈50% new).

Château Guillot-Clauzel is a small (≈2.5 ha) Pomerol estate; managed/consulted by Guillaume Thienpont (Vieux‑Château‑Certan) since 2018, modernizing viticulture and cellar work.
