Tasting Note
Ripe blackcurrant and blackberry with cedar, tobacco, graphite and spicy oak. Full-bodied and plush with fine-grained tannins, balanced acidity and a long mineral-tinged finish.
Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar or Comté. Asian: Peking duck, Korean BBQ (bulgogi), char siu, beef rendang, moderately spicy mapo tofu.
Production Method
Traditional Bordeaux vinification: destemmed, fermented in temperature-controlled vats, blended and matured 12–18 months in French oak barrels (≈70% new).
