Tasting Note
Perfumed red cherry, raspberry and dark berry with floral rose and spice; earthy mineral core, hints of crushed fennel and white pepper. Elegant, silky texture, fine tannins, vibrant acidity and a long mineral finish.

Production Method
Hand-harvested, 100% destemmed; chilled pre-fermentation maceration (~10°C), indigenous yeast fermentation in concrete (<35°C), 20–22 day maceration; aged 12–14 months in French oak (30–40% new); bottled unfined/unfiltered.
