Tasting Note
Dark cherry and wild strawberry with truffle, smoke, leather and spice; mineral, sanguine undertones, silky texture, fine-grained tannins, vibrant acidity and a very long, sapid finish.

Food Pairing
Roast beef, venison, duck, truffle dishes, mushroom risotto; Asian: Peking duck, miso-glazed black cod, shiitake or umami mushroom stir-fries, char siu.

Production Method
Fully destemmed, limited-intervention fermentations; aged c.18–24 months in oak (≈80% new). Vineyard moving toward organic/biodynamic practices under Etienne Julien.
